1 cup (8 oz) uncooked white basmati rice
½ package (6 oz) frozen mixed vegetables
½ package (6 oz) frozen baby lima beans
½ cup tomato sauce
2 table spoon butter
2 table spoon olive oil
½ tea spoon salt (adjust according to taste)
3 cinnamon sticks
2 cardamom pods (can be found in Indian stores, Asian stores or Whole Foods)
½ tea spoon whole black peppercorns
¼ tea spoon turmeric powder
2 cups vegetable broth
Wash, rinse and drain the rice. Put everything in a rice cooker and mix well. Cook on rice/white rice setting depending on your rice cooker. Serve warm with cucumber or dill dressing (recipe in Raita section).
The spices make it medium hot. The yogurt dressing will tone down the spices.
If you don't have vegetable broth use water.
If you don't have basmati rice you can use Jasmine or long grain rice. Add water as per their cooking instructions.
